Dalmatian pancetta

Dalmatian pancetta is cured meat product prepared from fresh pork belly obtained by a technological procedure that accompanies the salting, the drying, the smoking and the maturing. It represents part of the gastronomic heritage of Dalmatia region. Amid the constant change of dry north wind, locally called bura, rich with a clean aerosol of mountain herbs and moisture south wind locally called jugo, famous Dalmatian pancetta is created.
